Among the Wildflowers

Adding this to the things I love about San Diego: after a rainy "winter" in Southern California, we tend to get what's called a "Superbloom" around mid-March.

The first time I heard about this phenomenon was around 2016/2017 when I got to experience my first desert Superbloom in the Anza Borrego desert. And this year, our rainy season was rewarded with an entirely different Superbloom experience: the Walker Canyon Ecological Reserve poppy fields in Lake Elsinore.

Hearty Plant-Based Quinoa Chili

Even though it's still 90° degrees out in San Diego, we are officially in the middle of my favorite season: autumn. Which means it's time for one of my favorite fall activities: cooking chili.

This year, I've been interested in working more plant-based dinners into the rotation. As a lifelong meat eater, I don't have a lot of practice cooking meals that aren't constructed around meat. I also have a hard time feeling like I'm getting enough protein or like my meal is hearty enough when I attempt plant-based dinners.

But if there's any meal that defines heartiness it's chili. I don't think it's even possible for chili not to be hearty. So, inspired by a recipe I saw in a cookbook at my friend Makena's house, I attempted my own version of the One Pot Quinoa Chili from "28-Day Plant-Powered Health Reboot" by Jessica Jones and Wendy Lopez and it was delicious.

Jessica and Wendy's book has a lot of other amazing plant-based recipes and their Instagram account,  @foodheavenshow, is super inspiring. These two bicoastal registered dietitians have such a refreshing and realistic take on eating healthy. I will definitely be going back to their cookbook for more of our plant-based dinners this fall.

Ultimately, this recipe is as simple as it is tasty and it will easily provide dinner for two and at least 4-6 lunches to boot. It's also a great excuse to harvest your home garden or use up any veggies before they go bad!

Hearty Plant-Based Quinoa Chili
Yield: 6-8 Servings

  • 1 medium white onion, diced
  • 2 medium tomatoes, diced
  • 3 large carrots, diced
  • 1 large red bell pepper, seeded and diced
  • 2 large zucchinis, diced
  • 3-5 cloves of garlic, minced
  • 2 jalapeƱos, seeded and chopped
  • 2-3 tbsp extra virgin olive oil
  • 3 1/2 cups of water
  • 2 15.5oz cans of organic tomato sauce
  • 1 15.5oz can of organic black beans, drained and rinsed
  • 1 15.5oz can of organic chickpeas / garbanzo beans, drained and rinsed
  • 1.5 cups uncooked quinoa
  • Cumin
  • Chili powder
  • Red chili pepper flakes
  • Sea salt and black pepper
  • 2 tbsp diced green onions
  • Shredded cheddar cheese

1. Chop up all the veggies and mix together in one bowl with the minced garlic. Set aside. 
2. Heat up the olive oil in a large pot over medium heat. Once hot, pour the bowl of veggies in and cook for 5-7 minutes.
3. Add the water, tomato sauce, black beans and chickpeas and stir. 
4. Once all the veggies, beans and liquids are mixed together, add the uncooked quinoa and spices. Cook for 30-35 minutes, stirring every 10 minutes. Note: I don't really measure out spices, I just kind of eyeball it and keep adding it in as I cook. Go light with the red chili pepper flakes though, unless you want it really spicy!
5. Top bowls with some cheddar cheese and garnish with green onions. Enjoy!
6. Oh yeah! And compost what's left! :D


Super Bloomin'

Every year, we try to make it out to the Anza-Borrego desert at least once for a camping trip, usually at our favorite campground, Agua Caliente. But in all the years that we've headed out there, I've never once witnessed a Super Bloom.

In fact, I'd never even heard the term "Super Bloom" until last year, back when Death Valley exploded in a sea of color. This is because San Diego has been in a drought since I moved here almost 7 years ago. Now, after the wettest winter in years, we're finally out of the drought and we have our own desert wildflowers to prove it.

Suc It Up, Buttercup

It's Hump Day and if yours is going anything like mine, I bet you can't wait for the weekend. I snapped this picture of the crazy hanging succulent on our porch last night, just as the sunset was hitting it perfectly. It's flourished so much since Ryan brought it home and found a nice, sunny spot for it. For me, having it greet me every time I come home is a nice reminder to enjoy the simple things. So wherever you're suffering working for the weekend, suck it up and find something to smile about.

Guerrilla Gardening

It's November already!! Where did this year go?

Last night we celebrated Halloween with a little guerrilla gardening across the street from our house. When I say "we," I should clarify that I am usually the lookout, liability and/or photographer in these missions, whereas Ryan is the green thumb and the inspired guerrilla gardener.

We planted a cactus that Ryan had liberated a couple of weeks ago during our walk up to Nate's Point dog park. It's a bright little slice of greenery in an otherwise drab, often littered highway embankment. We've also planted golden poppies there before (and will again), so the cactus makes a nice addition.

After a successful mission, we headed into Aero for some Halloween nightcaps. It was a decidedly less hectic holiday compared to previous Halloweens that we've spent at Monster Bash downtown or at Nightmare on Normal in Hillcrest or throwing a huge house party. Truthfully, I was really uninspired this year. I couldn't think of a costume idea that I liked to save my life.

Now that November is here, I'm attempting to squeeze in a few extremely chill days before the craziness sets in. Next week my dad and brother and his girlfriend get into town and then the 3-Day is the weekend after and then Thanksgiving and then holiday parties and then Christmas and Ryan's birthday and New Year's Eve in rapid fire succession. I'm exhausted just thinking about it. Not to mention, I'll be training for Carlsbad the whole time. Which should actually be a good thing since it'll offset all of the food I'll be eating.

But even though the holidays bring a lot of stress and exhaustion among the good stuff, I'm excited. There's a lot to celebrate this year in our circle of friends and even more coming in 2014. So here's to an amazing holiday season... let the madness begin...

Aloha Friday!

Back in Connecticut, during my sophomore year of college, I went through a Hawaii phase. I blame Iz, that Hawaiian singer who covered "Over the Rainbow." They played it nonstop at work and something about that song temporarily convinced me that Hawaii's version of a laid back lifestyle was much more my speed (or lack thereof) than Southern California's, where I had planned to move after graduating. I watched "Blue Crush" about a dozen times during this phase, bought a ukulele off eBay, and started wearing flowers in my hair and more puka shells than a 90s frat boy. I also researched grad schools in Hawaii and decided I was going to move there and do my Master's in Hawaiian at the University of Hawaii Manoa.

We all know how this turned out.

Needless to say Hawaiian living still appeals to me. I don't think I'd ever want to move there, but I like some aspects of their culture. There, casual Fridays are called Aloha Fridays which is just more fun. It's their way of welcoming the weekend and it originated because businessmen wanted to wear aloha shirts in the office on Fridays. So that's where the recurring title for my 'Friday Five' posts comes from. Without further adieu:

1. Everything is blooming! My amazing boyfriend has the greenest thumb I know. In our backyard alone, he's got a beautiful vegetable garden starting to sprout, a thriving succulent garden, a wall of cacti and all sorts of flowers, including some beautiful morning glories, are blossoming.

2. Even more exciting: last year, under the cover of darkness, we ran across the street and did some guerrilla gardening by the side of the highway. We didn't think it took, but this week, more than a year later, a bunch of poppies popped up!



3. My super adorable Colette Headband from oh, sweet joy! arrived this week! I bought it in Lemon Drop and it is SO perfect for spring. :) oh sweet joy!, $13

4. Foam's 'Escape' issue finally made it to my mailbox. It's been a while since I did the smart thing and subscribed to Foam instead of just buying every issue as it came out. This one is gorgeous with plenty of destinations to add to my travel wishlist.

5. Ryan and I finally started watching 'Happy Endings' this week. I am hooked. Go rent the first season. Now.
